Everyone always raves about crockpots and how convenient and great they are. I don’t disagree but I always felt like I was missing something because the only thing I know how to make in a crockpot is chili or pulled pork. I decided it was time to expand my crockpot repertoire. I thought a buffalo chicken would be nice. This recipe is super easy and only 3 ingredients.
I made this one Sunday when I was too lazy to go to the grocery store. I only had chicken which sometimes honestly bores me to tears. I was craving something more exciting and satisfying. After I scoured my fridge and saw the hot sauce I knew what I had to do. Buffalo-ize.
You only need chicken thighs, hot sauce and butter. Pat the chicken thighs dry and season with some salt and pepper and lay flat in your crockpot.
Pour the hot sauce over the chicken and add the butter.
Turn on low, let sit for about 4 hours. That’s it you now have buffalo chicken! It should shred really easily at this point. I shred it all up in the crockpot and give it a good stir.
This made the most delicious sandwich and I still have leftovers. I am going to try it as a pizza topping next.
For the sandwich I just scooped on some of the buffalo chicken. Poured on a little of the sauce from the crockpot. Sprinkled with crumbled blue cheese and some scallions. So good!!
You could also just eat it straight from a bowl.
And don’t let your dog sneak any because you might have a mess to clean later the day. I might know.
- 2 lbs of boneless, skinless chicken thigh
- 1 cup of hot sauce (I use Frank's)
- 4 tablespoons of butter
- Salt/pepper to season
- Season the thighs with some salt and pepper and lay flat in your crockpot.
- Pour the cup of hot sauce over the chicken.
- Add in the butter.
- Cover and cook on low for about 4- 6 hours.
- Chicken should shred easily when it's done.
