Muffins have never been my choice as far as baked goods go. I usually prefer a donut or a brownie or anything extremely chocolatey. But strangely muffins were one of my major pregnancy cravings. One cold, snowy morning I was woken out of my sleep with an enormously overpowering desire for chocolate chip muffins. I could not shake it and I felt like some sort of addict. Normally in this situation I would just run out and buy a muffin somewhere but as I looked out my window snow was everywhere. Not in a pretty, wintertime scene sort of way but in a raging blizzardy one.
That’s when I knew I would have to make them myself. I quietly took out my phone, searched and found this recipe from Sally’ s Baking Addiction. I was exhausted, cranky, cold, hungry, huge and muffin-starved but I trudged through the recipe with Jake barking at my feet the entire time. I was hugely rewarded in the end because this recipe made the most magical, satisfying muffins I have ever tasted. I spent most of that morning eating most of the muffins in bed and I spent most of that night listening to my husband complain about muffin crumbs in the sheets.
This recipe produces fluffy muffins with a beautifully crisp top outer layer. Be sure to fill your muffin cups all the way so you get the really big tops perfect for breaking off.
I have to limit myself as to how often I bake these because I absolutely cannot control myself with these in the house. You can really justify eating a muffin at any point in the day so that doesn’t help. Breakfast, lunch, dinner, snack? Just hand me a muffin.
Here is my set up from that first snowy morning I baked these. No, there is no parsley in the muffins. I’m not really sure why it’s in the middle of my muffin ingredients.
I didn’t change a thing in this recipe except I didn’t have the sugar to sprinkle on the top and I’m not a huge fan of cinnamon so I left that out.
I have to admit I never thought I would eat through 6 jumbo muffins so quickly. How quickly? At the rate of a starving pregnant woman with a craving trapped in her house during a blizzard.
Uggh these muffins, why you gotta be so good?
- 3 cups (375) all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 eggs, room temperature preferred
- 1 cup (200g) granulated sugar
- 1 cup (240ml) milk
- 1/2 cup (120ml) canola oil (or vegetable oil/melted coconut oil)
- 1 teaspoon vanilla extract
- 1 and 1/2 cups (270g) semi-sweet chocolate chips (or chocolate chunks; or dark chocolate; or milk chocolate)
- coarse sugar for sprinkling (optional)
